Our Story

I’m Alex, and what started in 2014 with a single coffee van (and a dream) has now become West Berkshire Roastery - complete with two coffee roasters and a Labrador who thinks he’s the CEO.

Along the way, I discovered that coffee is one big, tangled mess - dodgy practices and shady tactics all over the place. But there’s also a whole lot of amazing farmers doing it right. So, I ditched the usual suspects and set off on a quest for the good stuff: direct-traded coffees served with a generous side of transparency.

With some caffeine-fuelled creativity, I’m here to bring you one of the finest (and cleanest) coffee experiences possible. It’s coffee refreshingly drama free.

Mexico Ki-Saya:

The flower, Plumberia rubra, is native to Chiapas. The legend behind the flower is that it represents immortality for its ability to thrive in the harshest conditions. Ki-Saya links the effort of its coffee growers and conserves the combination of culture and power of the land. The name comes from the combination of 'Ki' which means "tasty" and 'Saayab' which means "nature" in Mayan.

The Region

Chiapas, Mexico’s southernmost state, boasts a diverse tapestry of culture, history, and natural wonders, with its coffee region being just one facet of its charm. Nestled in the Sierra Madre de Chiapas mountain range, this region is a classical paradise, offering breathtaking landscapes including lush rainforests, cascading waterfalls, and ancient Mayan ruins.

In Chiapas, 44% of the population is indigenous: Mayan, Tzotzil ant Tzeltal. These vibrant indigenous cultures have thrived in Chiapas for centuries and continue traditions of music, dance, and artisan crafts. The people wear beautiful handmade clothes, the men dressing in short pants tied with a red cotton belt and a shirt that hangs down to their knees. They also wear leather huaraches and a hat decorated with ribbons. Women wear a red skirt, a short huipil blouse, and use a shawl to carry their babies and bundles.

Once opened, consume within 4-6 weeks for best results and before best before date. Unopened lasts for 6 months. Best kept in cool dry environment.

Apoligies

Sorry the last review I posted was actually for Signature Gold and not Paru Finca, 😅 early in the morning pre coffee, I have only had a cup of Peru finca and haven't formed much of an opinion other than it is a plesent full bodied coffee with some familiar flavor profiles which I am looking forward to tasting again, hope this hasent confused anyone on a choice decision.

As expected the been quality doesn't change and the importance of organic produced coffee can not be stressed enough given the pesticides used in some countries are banned in our contrie. Now off my soap box and to the coffee, I found the grind size dificult to dile in but eventually settled on medium to course grind for the switch and airopres using poarover and steep combo not sure if the smaller than normal been was the reason for that, a finer grind restricted the flow. Temp 90 degrees hit the sweetness and astringent.balenc I enjoy, also seemed to bring out the chocolate profile. I can recommend all the coffee available for the quality and ethical importance, but finding the right one for you is half the fun. I thought I had reached Nervana with the Brazilian coffee earlier in the year but it hasent been available since then we live in hope it was a special brew "not from girders "

Fresh and tasty

I have tried Brazil Terra Preta beans for the first time and was not disappointed! You can really taste the chocolate and caramel flavour, amazing for cappuccino or latte.
