Our Story
I’m Alex, and what started in 2014 with a single coffee van (and a dream) has now become West Berkshire Roastery - complete with two coffee roasters and a Labrador who thinks he’s the CEO.
Along the way, I discovered coffee is one big, tangled mess. But there's a whole lot of amazing farmers doing it right. So, I ditched the usual suspects and set off on a quest for the good stuff: direct-traded coffees served with a generous side of transparency.
With a bit of Berkshire flair and caffeine-fuelled creativity, I’m here to bring you one of the finest (and cleanest) coffee experiences you’ll ever sip. I hope you’ll agree. It’s coffee refreshingly drama free.

Simmer Down 50% Decaf is our half caff coffee for coffee drinkers who want the comfort of regular coffee without the full hit. This half caff blend balances caffeinated coffee with decaf coffee in a 50/50 mix, so you get half the caffeine and a smoother ride when your caffeine intake needs a reset.
Expect a medium roast cup with a rounded sweetness - think vanilla fudge, caramelised biscuit, and a gentle milk chocolate finish. It works as a breakfast blend style coffee, and it’s also a smart pick if you deal with caffeine sensitivity or occasional caffeine jitters.

Back in 1995, the Bayter Family rolled up their sleeves and dove headfirst into the agricultural scene at El Vergel farm. Avocado was their main squeeze, but when avocado prices took a nosedive in 2006, they knew it was time to shake things up. So, they tossed some coffee varieties into the mix – catimore, red, yellow caturra – and boom, a coffee empire was born! Fast forward to 2016, and with a little guidance from coffee guru Miguel Jimenez, they planted speciality coffee varieties, setting the stage for some serious coffee greatness.
Then, in a stroke of genius, they embraced natural coffee processes in 2018, tinkering with fermentation control like mad scientists in a lab. And let's not forget their claim to fame – the Koji fermentation process, a game-changer in the green coffee game! Now, meet the dynamic trio behind the scenes: Martha Montenegro, along with her coffee-savvy partners Elias and Shady. Together, they're not just brewing coffee; they're brewing up a whole community revolution!

Did you know?
Decaf coffee is still packed with antioxidants, magnesium, potassium, and niacin. Only the caffeine molecule is extracted during the decaffeination process.
How we remove the caffeine from our coffee:
- The green coffee beans are soaked/cleaned in water, as the beans expand the pores open up and the caffeine becomes mobile.
- Pressured Carbon Dioxide is introduced, this combined with the present water creates sparkling water. The CO2 acts like a magnet to the caffeine molecules, extracting it from the beans.
- The water is then drained into an evaporator which precipitates the caffeine rich carbon dioxide out of the water.
- This cycle is repeated until the caffeine level is low enough to be classified as decaf.
- The decaffeinated coffee is then gently dried until it reaches its original moisture content and is then ready for roasting.

As ever super fresh from WBR which, makes for a nice lively extraction; bags of Crema.
I'm not good at flavour notes, but I get almond/marzipan? Tasty anyway.
It's a relatively light roast for espresso, so the challenge as always is getting good enough extraction for a nice balance. For this reason it suits Moka especially well.
Probably the best alternative to completely caffeine free is Simer Down with just half the caffeine, personally I am yet to find a perfect caffeine free coffee but this one is a good coffee with taste and certainly not bitter!
We use Decaf Coffee Beans and these are lovely and delivers a lovely Coffee.
I was looking to preserve the ritual of coffee whilst cutting down my caffeine intake. This roast hits just the spot giving me that little boost in the mornings whilst preserving the coffee making experience. I would whole-heartedly recommend to anyone.
Bought this as an option of those low energy maternity leave days , when nursing I didn’t want high caffeine and this product was perfect
Ordered the Simmer Down 50/50 along with Signature Gold. Have to say the 50/50 as an espresso through my Rancilio wasnt to my taste but makes an absolutely lovely cafetiere coffee.
The Signature Gold was a fantastic coffee through the machine using 18.6g beans ground in Vario, producing around 50g coffee in 25 secs. Will definitely be ordering again and trying some of your other coffees. Thank you for roasting top quality products.

I’ve had a few different coffees from West Berkshire Roastery and they’ve been consistently great. This time I tried the Simmer Down 50% Decaf as I’m trying to cut back my caffeine intake a little. The coffee was a hit - really smooth and had body - and I would highly recommend it.
The flavour was chocolate forward and very smooth. and all without the full caffeine hit
I have struggled to find a nice bean that lives up to its notes. This does make a love smooth espresso with a hint of caramel. I may try the decaf next time as I do like to have a coffee later in the day. 50/50 is great and just enough of a hit of caffeine for my morning
Simmer down is a 50/50 coffee with 50% caffeine free so when you need more coffee without feeling wired this is the way to go. and best of all it tastes amazing
I was thrilled when I realised West Berkshire Roastary do a lower caffeine option as I already loved their other products but am now interested in lowering my caffeine intake. I get the whole beans which I grind in batches every couple of days and it’s the tastiest and freshest coffee I’ve ever had at home. I will definitely be buying another pack.
It may simmer you down in terms of caffeine, but nothing less is missing - far from. Incredible chocolate aroma and makes a rich, full, smooth shot of expresso. Thanks to Simmer Down, I can enjoy delicious coffee later into the day - and do.
I like this coffee but prefer the signature gold
Love this coffee, taste is delicious and I can’t taste it’s 50:50 but it means I don’t start the day too wired on caffeine. I use it in a moka pot and it’s delish. Recommend anyone to try it and see how you feel with a little less caffeine, I don’t think I’d go back to ‘full fat’ now - I no longer get that late afternoon energy crash with less caffeine in the morning.
Having bought coffee from WBR already I decided to try the Simmer Down Decaff to see if it hit the spot without sending me into orbit (I drink far too much coffee!) It is a great half way house, I can happily drink it without taking off but with all the great flavour. When I need the full hit I use one of the other great coffees on offer. Thoroughly recommend the Simmer Down Decaff for hitting the spot.
As I drink far too much coffee, I decided to give the 50/50 version a try and see if I noticed any change in taste. No - just as good as the other flavours!
This is the third WBR roast that I have tried and I am very pleased I have. It is a 50% decaf but still retains the full flavour hoped for. I shall now stick with this choice but still sometimes enjoy the Signature Roast which is an exceptionally fine coffee. I have been delighted with the level of reliable service received; it is a rare commodity these days!
I bought this coffee as I am sensitive to caffeine but I wanted to get the taste and feel of a proper coffee without the downsides. Simmer Down really delivers on that and I am very happy - will certainly be my go to from now on!

You wouldn't know this is decaffeinated from the flavour, still rich and full bodied, but the intense caffeine hit that one normally gets from fresh, high end coffee beans is subdued yet pleasant.
I usually have one gold coffee in the morning and stick to decaffeinated the rest of the day so being able to have a simmer down decaf is the cherry on the cake ,

I have come back to WBR's coffees after some time trying other roasters. I was always a fan of Black Gold, although Signature was a close second, for espresso. For health and sleep reasons I now limit my caffeine intake and so Simmer Down has become my final, after-lunch coffee around 1.30pm daily. I enjoy the great taste and find it still feels like a full strength brew.
Recipe: 13g ground at a 33 setting on Niche Zero (original), 95C water. Inverted Aeropress method. 75g bloom phase with five stirrings back and forth. At 45 seconds add another 75g water and stir again, at 90 seconds top up to 210g of total water. Leave until three mins, add cap and filter, and carefully invert with cap held over filter. Begin slow and gentle press at 3mins 30s all the way down including past the "hissing".
Whichever WBR coffee you prefer, please drink and enjoy.
