Our Story

I’m Alex, and what started in 2014 with a single coffee van (and a dream) has now become West Berkshire Roastery - complete with two coffee roasters and a Labrador who thinks he’s the CEO.

Along the way, I uncovered some truths: coffee is one of the planet’s most sprayed crop. Pesticides? Chemicals? Absolutely everywhere. So, I ditched the usual beans and went on a quest for the good stuff: direct-traded coffees that don’t come with a side of artificial pesticides.

With a bit of Berkshire flair and caffeine-fuelled creativity, I’m here to bring you one of the finest (and cleanest) coffee experiences you’ll ever sip. I hope you’ll agree. It’s coffee refreshingly drama free.

Simmer Down Decaf drip brew bags give you the same Swiss Water processed decaf we roast for our whole bean bags, just in a single-serve format that needs nothing but hot water and a mug. Most decaf coffee bags on the market are an afterthought: cheap green beans, stripped of caffeine with whatever solvent is cheapest, and sold as good enough because decaf drinkers are "already compromising." We don't think that's good enough, so we didn't build Simmer Down that way.

What's actually in your cup

Each drip brew bag is 99.9% caffeine-free, decaffeinated using the Swiss Water Process before roasting. No chemical solvents touch the beans at any stage. It's slower than the alternatives, which is exactly why most large roasters don't use it.

Lab-tested, not just labelled

Our whole Roastery Collection, Simmer Down Decaf included, is independently lab-tested for artificial pesticides, mould and mycotoxins. Coffee is one of the most heavily sprayed crops in the world, and decaf is usually the last thing anyone checks. We check it anyway.

Decaf coffee also keeps hold of the antioxidants, magnesium, potassium and niacin that survive the roast, and because it's lower in acid than most regular coffee, it's gentler on your stomach if a strong cup usually doesn't agree with you.

Origin and roast

Simmer Down is single origin, sourced from Cajamarca, a high-altitude growing region in northern Peru. Bourbon and Typica varietals, washed process, roasted medium to develop the caramel and vanilla notes the beans are known for without burning off what makes the origin worth drinking on its own. Expect vanilla fudge, caramelised biscuit and a touch of hazelnut in the cup. It won a Great Taste Award, and the judges picked up all of that without knowing they were tasting a decaf.

How to brew it

Drop one drip brew bag into your favourite mug. Pour over freshly boiled water, filling almost to the top, and give it a stir. Leave to brew for 3 to 5 minutes, longer if you like it stronger. Squeeze the bag against the side of the mug with a spoon to get the last of the flavour out, then lift it clear and discard. Good with milk or black.

Keep unopened bags in their sealed cardboard box, somewhere cool and dry, out of direct light. Once opened, they're best used within 4 to 6 weeks for the freshest cup. Decaf loses its edge faster than regular coffee once the pack's open.

What percentage of caffeine is removed from Simmer Down Decaf?

Simmer Down Decaf is 99.9% caffeine-free. It's decaffeinated using the Swiss Water Process before roasting, which removes caffeine using only water, temperature and time, with no chemical solvents involved at any stage.

Is Swiss Water Process decaffeination chemical-free?

Yes. Swiss Water uses water saturated with the natural compounds found in green coffee to draw out caffeine, rather than a chemical solvent. It's slower and more expensive than solvent-based methods, which is why most large coffee brands don't use it.

Can I drink this in the evening without it affecting my sleep?

At 99.9% caffeine-free, Simmer Down is a sensible evening option for most people. If you're highly caffeine-sensitive, note that "caffeine-free" isn't the same as zero, so it's worth judging against your own tolerance first.

How long do the drip brew bags stay fresh once opened?

We recommend using opened bags within 4 to 6 weeks for the best cup. Keep them resealed in a cool, dry place. Unopened, they'll keep for around 6 months from the roast date printed on the box.

Is decaf coffee actually good for you?

Decaf still contains antioxidants, magnesium, potassium and niacin, and it's lower in acid than regular coffee, which some people find easier on the stomach. Only the caffeine molecule is removed during decaffeination, so everything else about the coffee stays the same.
