I’m Alex, and what started in 2014 with a single coffee van (and a dream) has now become West Berkshire Roastery - complete with two coffee roasters and a Labrador who thinks he’s the CEO.
Along the way, I discovered that coffee is one big, tangled mess - dodgy practices and shady tactics all over the place. But there’s also a whole lot of amazing farmers doing it right. So, I ditched the usual suspects and set off on a quest for the good stuff: direct-traded coffees served with a generous side of transparency.
With some caffeine-fuelled creativity, I’m here to bring you one of the finest (and cleanest) coffee experiences possible. It’s coffee refreshingly drama free.

El Jaguar is a family farm in Jinotega, Nicaragua, that produces organically grown specialty coffee to support the conservation of nature in the coffee producing region. Liliana Chavarría (Jinotegan), Georges Duriaux (Swiss living in Nicaragua since 1978) and their son Jean-Yves Duriaux Chavarría, are conservationists, bird researchers and coffee lovers.
They started Reserva El Jaguar Coffee Farm in the early 1990s through nature-friendly agriculture that could support the conservation of the surrounding forests.
Hand-picked at peak ripeness, every coffee cherry is pulped and submerged in fresh spring water for 24hrs.
After fermentation, the mucilage is carefully removed and the coffee is dried slowly and evenly on sunlit patios for 20-25 days. The blending and drying allow for all the coffee to homogenise resulting in a rich cup with notes of sweet caramel, cookie and nut.
The farm extends over 50 hectares of Rainforest Alliance-certified agroforestry at an elevation of 1,300 to 1,400 meters above sea level. The surrounding area of 110 hectares is cloud forest under conservation. The farm is renowned for its commitment to preserving biodiversity, hosting 383 bird species (50% of Nicaraguan bird species) and supporting extensive environmental education and reforestation projects in surrounding communities.
