So, I ditched the usual suspects and set off on a quest for the good stuff: direct-traded coffees served with a generous side of transparency.

Juan Peña’s journey to cultivating award-winning coffee was born from tragedy but forged in resilience. After a devastating flood destroyed his family’s rose farm, Juan decided to transform his land into a coffee haven. With no prior experience, he immersed himself in the art and science of coffee cultivation, studying everything from plant genetics to fermentation techniques. His dedication paid off—Hacienda La Papaya has since become synonymous with excellence in specialty coffee.
What sets Hacienda La Papaya apart is its meticulous approach to every step of the coffee production process. Each bean is hand-picked at the peak of ripeness, ensuring only the highest quality cherries are selected.
Juan and his team employ cutting-edge fermentation techniques, experimenting with anaerobic and natural processes to unlock unique flavour profiles. This precision results in cups that boast delicious notes of chocolate and a honey-like sweetness—a true testament to the farm’s terroir.
